The deliciousness of the juices that the beef is cooked in is called consomé which is what is traditionally served as Birria. Paleo Bibimbap is a modified version of the traditional Korean dish, Bibimbap, tailored to fit Paleo dietary guidelines. Instead of rice, this version might use cauliflower rice as the base (to make it paleo), but you can also pick brown rice or white rice. It's topped with a variety of vegetables, spinach, mushrooms, carrots, and zucchini, all lightly sautéed or steamed. Instead of traditional gochujang (which often contains sugar and soybean paste), a Paleo-friendly hot sauce or a mixture of red pepper flakes and sesame oil could be used (Sriracha). The dish typically includes a protein source like thinly sliced beef or chicken, and we added a few more to make it even more personable, and you can even make it Vegan by picking tofu :-).
