This delicious Italian minestrone soup is vegetarian, vegan, and gluten-free. This soup is made with our own vegetable broth, avocado (yes avocado 🙂 ) Onions, zucchini, tomatoes, kidney beans, lima beans, carrots, celery, bay leaves, and a bunch of delicious aromatics.
