Vegan Enchilada Casserole
Our Vegan menu is growing, and as we develop it, we noticed that we didn’t have one of our favorite go to meals at the kitchen when we are working, Vegan Enchiladas! One of our favorite thing to do at the kitchen is to mix a lot of different veggies and add one of our Mexican sauces, in this case we are doing just that and adding vegan cheddar cheese and baking them into delicious enchiladas. For this meal we are also going to be using tomato tortillas, a little bit different from our regular whole wheat, but they are so good you will see the difference. For these enchiladas. You will be able to pick your own rice (Jasmine white, Cauliflower, and Brown Rice.
If you pick Cauliflower rice as the base, this meal will also be Paleo, Keto, and Gluten-free.
Ingredients: (No Dairy, No Soy)
Seasonal Veggies (Usually Broccoli, Cauliflower, Eggplant, Squash, Red Onions Etc…)
