Our version of the Ketogenic diet, or keto diet for short, is a low-carbohydrate, high-fat diet that puts the body in a metabolic state called ketosis, and we use a Paleo base to make it even better! By drastically reducing carbohydrate intake and increasing fat intake, the body is forced to burn fat for energy instead of glucose from carbohydrates. This leads to a decrease in insulin levels, which can lead to weight loss and improved blood sugar control. The diet typically consists of high-fat foods such as meat, fish, eggs, nuts, and oils, and limits carbohydrate-rich foods such as grains, fruits, and starchy vegetables. However, it is important to consult a healthcare professional before starting the diet as it may not be suitable for everyone.

The deliciousness of the juices that the beef is cooked in is called consomé which is what is traditionally served as Birria.
